I gently stirred/mixed the cheese with some seasonings (garlic & onion powder). I microwaved the dough for 90 seconds until it looked crinkled/bubbly around the edges. I slowly kneaded in ½ Cup of almond flour to create the crust. I rolled it out and then cut it like you see in the picture. I baked the dough for 4-5 minutes at 375 degrees and then let it sit for about 2 minutes before filling. I had shredded chicken earlier that was seasoned with a basic meat seasoning. I placed about a spoonful to two on the dough and rolled them. I placed toothpicks in them to help hold their shape. I heated up a pan on the stove with EVOO and fried for about 30 seconds to 1 minute on each side. They were great! I served them with a homemade guacamole and sour cream!

Helpful hints: I used parchment paper to line baking sheets and I poked the dough with a fork several times before placing in oven so it didn’t bubble as it baked. The dough is so easy and delicious! I've used it for pizzas also. For pizza I used 2 C of Mozzarella and did not use a mexican cheese mix. I also use some additional spices for the pizza dough including an italian mix, basil and oregano.
