One of my contributors, Ginger, sent me this healthy oatmeal recipe that she swears by! What makes this oatmeal so special? By adding a little heavy cream and the bananas to the cooking process you are creating the most incredibly creamy oatmeal you have ever had. Oatmeal need no longer be a breakfast that is overly sugary, or hard and dry. This will be one the kids ask for! (She said that her kids inhale this stuff!)
Oatmeal Ingredients:
1 ¾ cup boiling water
1 cup old fashioned oats
pinch of salt
1.5 tbsp chia seeds
2 - 3 tbsp heavy cream
3 tbsp pure maple syrup (plus more to taste)
1 tsp vanilla
1 tsp cinnamon
3 tbsp coconut
2 bananas, sliced
a handful of blueberries
¼ cup sliced almonds
Directions:
- In a medium saucepan bring 1 ¾ cups of water to a boil then add in oatmeal, and reduce heat to medium low. Add your chia seeds, being sure to stir so they don't stick together.
- Let cook about 5 minutes until water is absorbed and oats are tender.
- Add in the rest of your ingredients except almonds to heat through. At this point you can taste and see if it is sweet enough for you, if not add a little more maple syrup. Garnish with almonds and enjoy
