Try making a fun Halloween lunch for your kids this fall season! You can make these cute mini pumpkin quesadillas by using just two ingredients! I think any child would love to be served this meal or even to help make it.
- Two tortillas
- Re-fried beans/ sour cream (optional toppings)
Start by stacking two tortillas on top of each other and cut three small circles.
Split them apart and cut out some jack-o-lantern faces on one side and put cheese on the other.
Place the top tortilla on the bottom and microwave them for 30 seconds- 1 minute. Pipe some sour cream on them to make a leaf and add some re-fried beans to make the stem!
