Apple Crumble Bars Recipe

INGREDIENTS
Shortbread
½ cup unsalted butter, room temperature, cut into cubes
¼ cup granulated sugar
¼ tsp baking powder
¼ tsp. kosher salt
1 cup all-purpose flour

Apple Filling:
3 large granny smith apples, peeled and diced
½ cup brown sugar
1 tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. ginger

Topping:
½ cup all purpose flour
½ cup sugar
1 cup butter – room temp to cut in.

Directions:
Preheat your oven to 350 degrees
Line an 8x8 baking pan with parchment paper.
Shortbread Base:
In a large bowl, add the flour, sugar, baking powder and salt. Use a whisk and mix until combined
Add in the cubed butter
Using a fork, or your hand, cut the butter into the flour mixture until coarse crumbs form
Press the dough into the parchment lined pan and bake for 8 minutes.
Once done, set aside to cool
Topping:
Mix flour, brown sugar using a whisk.
Cut in the butter into cubes and knead together with your hands.
It should resemble small coarse crumbs, just like the shortbread
Set aside

Apple Mixture:
In a medium sized bowl, combine the apples, sugar, spices and toss, until the apples are well coated.
Pour apples over the shortbread
Add the topping
Bake for 30 minutes.
Remove from the oven and allow to cool to room temperature.

Place in the fridge to set for at least 2 hours.
