Creamy Chicken Pasta

I LOVE anything pasta!  Bring on the carbs!  This as a nice light meal with some veggies to trick our brains into thinking we are being healthy!

What you need:

  • 2 TBS Butter
  • 3 TBS Flour
  • 1 C milk
  • 2 oz cream cheese
  • 1 C chicken broth
  • 7 cloves garlic (minced)
  • 2 C spinach
  • 1 TBS parsley flakes
  • 6 oz angel hair pasta
  • Can of diced tomatoes
  • Salt & pepper to taste.

What you need:

  1. Thoroughly cook chicken in a frying pan.  Slice into strips.Pin
  2. Melt butter in a large pot.  Whisk in flour & cook until it is paste like (about a minute).
  3. Stir in milk and cook over medium until milk thickens.
  4. Add cream cheese & cook until melted.
  5. Add in the chicken broth, tomatoes, garlic, salt, pepper, & parsley. Simmer for about 15 minutes.Pin
  6. While that is simmering, cook the pasta el dente.
  7. Add spinach & pasta to the pot. Cook another 5 minutes.PinPin
