Here's an amazing St. Patrick's Day treat/snack idea for your kids! They are rainbow pudding cups that turned out adorable. You can also customize them any way you want such as using rainbow colored licorice for the arch instead of sour punch. I think these would be so cute to bring in the classroom with all the kids names on them!

Ingredients:

  • Pudding cups
  • Whipped cream (I use 1 cup whipping cream, 1 tsp vanilla, 2 tbsp powdered sugar and blend) but canned is totally fine.
  • Sour punch rainbow straws
  • Graham crackers finally ground
  • Corn syrup
  • Optional: Green cardstock paper

Start by cutting the sour punch straws in half and stick them together, shaped into a U. Dip the top of the pudding cup in corn syrup then into graham crackers and snuggle the "rainbows" into the pudding. Pipe (or spray) your whipped cream around the rainbow like clouds. You can cut out shamrocks and 4 leaf clovers using cardstock paper and attach them with double stick tape. Such a cute personal touch for a play date!
