4 C. cooked long grain white rice
½ can black beans, rinsed and drained
½ can corn, drained
2 medium tomatoes, chopped
¼ red onion, sliced
¼ C. fresh cilantro, roughly chopped
½ C. sour cream
Juice of 1 lime
¼ tsp. chipotle pepper powder (can use chili powder)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
Cook rice according to directions to make 4 cups cooked.
Roll lime on cutting board back and forth and put in the microwave for 10-15 seconds. This will help get more juice out!
In a large bowl, add rice, beans, corn, tomato and onion.
In a small bowl, mix sour cream and fresh lime juice until combined.
Pour sour cream and lime into the large bowl.
Add salt, pepper, garlic powder, chipotle pepper powder and mix.
Serve warm or cold. Enjoy!
