I LOVE anything pasta! Bring on the carbs! This as a nice light meal with some veggies to trick our brains into thinking we are being healthy!
What you need:
- 2 TBS Butter
- 3 TBS Flour
- 1 C milk
- 2 oz cream cheese
- 1 C chicken broth
- 7 cloves garlic (minced)
- 2 C spinach
- 1 TBS parsley flakes
- 6 oz angel hair pasta
- Can of diced tomatoes
- Salt & pepper to taste.
What you need:
- Thoroughly cook chicken in a frying pan. Slice into strips.
- Melt butter in a large pot. Whisk in flour & cook until it is paste like (about a minute).
- Stir in milk and cook over medium until milk thickens.
- Add cream cheese & cook until melted.
- Add in the chicken broth, tomatoes, garlic, salt, pepper, & parsley. Simmer for about 15 minutes.
- While that is simmering, cook the pasta el dente.
- Add spinach & pasta to the pot. Cook another 5 minutes.
