I found these yummy zucchini brownies from Adriana on Instagram! They are so yummy! Note: This recipe isn't very sweet...for more sweetness you can put ½ cup chopped bakers chocolate or chocolate chips.
Ingredients:
- 2 cups flour
- ½ cup cocoa powder
- 1 tsp. baking soda
- ½ tsp. salt
- ½ cup oil
- 1-½ cup sugar
- 1 Tbsp. vanilla
- 2 cups shredded cups zucchini
Directions:
- Heat oven to 350°F. Line 13x9-inch pan with parchment, with ends of parchment extending over sides. Spray with Pam.
- Combine the flour, cocoa powder, baking soda, and salt in large bowl. Whisk oil, sugar and vanilla until blended in another bowl. Add flour mixture. Stir in zucchini. Mixture will resemble coarse crumbs.
- Press zucchini mixture onto bottom of prepared pan. Bake 25 to 30 min. Let cool. Use parchment paper to remove from pan. (I used store bought frosting because I was short on time)
