Here's a twist on a classic lasagna recipe ~ a MEXICAN taco lasagna!! It's delicious and so easy to make, the whole family will love it! Top it with sour cream, salsa, you name it!
Ingredients:
- 3 roma tomatoes; diced
- 2 avocados; diced
- 3 tablespoon cilantro; chopped
- 1 ½ cup ricotta cheese
- 3 tablespoons taco seasoning
- 1 egg
- 1lb ground beef
- 1 red onion; diced
- 2 cups cheese
- 1 box lasagna noodles
- 1 tablespoon olive oil
Directions:
Boil lasagna as directed on box.
In a saute pan, add ground beef and half the onion. Cook until meat is browned. Add 2 tablespoons taco seasoning and stir well.
Mix ricotta, egg, and 1 tablespoon taco seasoning.
Oil lasagna pan. Add in one layer of pasta. Top with ricotta cheese. Add another layer of pasta and top with ground beef. Add the third layer and top with cheese, remaining onion, tomatoes, and avocado. Cover and bake for 15 minutes at 350 F. Remove foil and broil on high for 2 minutes until cheese is melted.
Top with cilantro and serve.
