This delicious looking cauliflower fried rice was shared by Melissa Dawn! If you're on the keto diet or a low carb diet, this recipe is a must make. You can hardly tell a difference (and I normally hate cauliflower).
Ingredients:
- Chicken breast
- 5 eggs scrambled
- 1 cup diced carrots and peas
- 1 cup frozen onion
- 1 Tbsp garlic
- 2 packs of riced cauliflower (Birds Eye brand in frozen section or make it homemade by shredding a head of cauliflower then steaming it)
- Soy sauce
- 2 tbsp bone broth
Directions:
Cook diced chicken in pan, add garlic and diced frozen onion with broth (I used bone broth but any would do) then add the egg.
Steam the pouches in the microwave, cook the veggies in the microwave and drain any water... mix it all in a bowl with soy sauce 👌🏻
