This delicious goat cheese and spinach meatloaf recipe is perfect for low carb diets and keto (omit tomato paste or use sugar free ketchup.) Thanks to Suzie Huerta for sharing.
Ingredients:
- 2 pounds ground beef
- 2 TBSP tomato paste
- 1 large yellow onion
- 3 garlic cloves (minced)
- 3-4 oz goat cheese (in a roll)
- 1 cup spinach
- 2 scallions (chopped)
- 2 eggs
- ½ teaspoon salt
- 1 rosemary sprig
- ½ teaspoon cayenne pepper
- ½ teaspoon pepper
- 2 teaspoon dried oregano
Directions:

- Preheat oven to 425 F.
- Add the meat and eggs into a mixing bowl. Add finely chopped scallions, garlic and onions. Mix.
- Add seasonings and mix well.
- Spread out a sheet of plastic wrap then roll the meat flat on it in the shape of a long rectangle. Top with spinach and the cheese.
- Pull the plastic wrap up over the meat and roll it.
- Top with tomato paste (optional) and rosemary sprigs.
- Bake for 50-55 minutes.
